Every year from our jack-o-lanterns we make roasted pumpkin seeds.
Here is my favorite recipe:
Roasted Pumpkin Seeds
2c. raw pumpkin seeds with shells
about 2tsp. butter, melted
and about 3tsp. salt
Directions: Heat oven to 300 degrees
Toss seeds in bowl with melted butter and salt.
Spread seeds in a single layer on cookie sheet.
Bake for about 45 minutes or until browned.
Stirring occasionally.
When cooled shells should be dried and easy to eat,
if they are not, reheat and cool.

Thanks for this recipe, I'm definitely gonna try it out. The one time I ever made roasted pumpkin seeds they didn't turn out very good.
